INGREDIENTS

  • 2eggs
  • 23cup milk
  • 3slices bread, torn into pieces
  • 12cup chopped onion
  • 12cup grated carrot
  • 1cup shredded cheddar cheese or 4 ounces cheddar cheese or 4 ounces mozzarella cheese
  • 1tablespoon chopped fresh parsley or 1 teaspoon dried parsley
  • 1teaspoon salt
  • 1teaspoon basil (optional) or 1 teaspoon thyme (optional) or 1 teaspoon sage (optional)
  • 14teaspoon pepper
  • 1 12lbs lean ground beef

DIRECTIONS

  1. In a large bowl, beat eggs.
  2. Add milk and bread; let stand a few minutes or until the bread absorbs the liquid.
  3. Stir in the onion, carrot, cheese, herbs and seasonings.
  4. Add beef; mix well.
  5. In a shallow baking pan, shape beef mixture into a 7 1/2 inches x 3 1/2-in. x 2 1/2-in. loaf.
  6. Bake at 350 degrees for 45 minutes.
  7. Meanwhile, combine topping ingredients. Spoon some of the topping over meat loaf.
  8. Bake for about 30 minutes longer or until no pink remains, occasionally spooning some of the remaining topping over loaf.
  9. Let stand 10 minutes before serving.

TOPPING

  • 12cup packed brown sugar
  • 12cup tomato sauce
  • 1teaspoon mustard

Ingredients

  • 4 boneless, skinless chicken breasts, (1-1 1/4 pounds)
  • 3 teaspoons extra-virgin olive oil, or canola oil, divided
  • 1/4 cup onions, finely chopped
  • 3 cloves garlic, minced
  • 1 cup reduced-sodium chicken broth
  • 2 teaspoons flour
  • 2 tablespoons dill, chopped fresh, divided
  • 1 tablespoon lemon juice
  • freshly ground pepper, to taste
  • salt, to taste

Instructions

Step 1
Season chicken breasts on both sides with salt and pepper. Heat 1 1/2 teaspoons oil in a large heavy skillet over medium-high heat. Add the chicken and sear until well browned on both sides, about 3 minutes per side. Transfer chicken to a plate and tent with foil.
Step 2
Reduce heat to medium. Add the remaining 1 1/2 teaspoons oil to the pan. Add onion and garlic and cook, stirring, for 1 minute. Whisk broth, flour, 1 tablespoon dill and lemon juice in a measuring cup and add to pan. Cook, whisking, until slightly thickened, about 3 minutes.
Step 3
Return the chicken and any accumulated juices to the pan; reduce heat to low and simmer until the chicken is cooked through, about 4 minutes. Transfer the chicken to a warmed platter. Season sauce with salt and pepper and spoon over the chicken. Garnish with the remaining 1 tablespoon chopped fresh dill.
